Ingredients
- 1/3 [2.7 oz] cup fresh lime juice
- 1 Tbsp ground cumin
- 1 Tbsp sea salt
- 1/3 [2.7 oz] cup olive oil
- (2) 15oz cans black beans, drained, rinsed
- 4 1/2 tsp red wine vinegar
- 4 cups water
- 2 cups [16 oz] dry quinoa, rinsed
